Gluten Free Sour Cherry & Ginger Scones

The one problem with going on "vacation" to your mom's house? Being wrangled into picking the year's crop of sour cherries at 7am on a Sunday while still in your pajamas. The reward, you know, besides spending quality time with your mom, being the return home with a pound of perfectly red cherries. Tiny, tart, and bright red, sour cherries have a short season at the end of June through beginning of July depending on where you are in the country. They're not as sour as you'd think and lend themselves well to just about everything - sauces, pies, jams, baked goods - but especially sweet things where their tartness has something to play against. The crop this year was impressive and a few days later I made my way home with pot full of them sitting in my passenger's seat and no ideas in my head on how to use them other than straight up eating them, which, you know, I did happily. After some deliberating I landed on scones because I was craving something cake-like but not too sweet... and hence, these gluten-free oat scones were born. Like their brethren the zucchini bread, I recommend eating these warm with plenty of grassfed butter (I like Kerrygold) and an inappropriately large mug of coffee. Because why not.

Gluten Free Sour Cherry & Ginger Scones

1 cup oat flour (use a coffee grinder to make your own from rolled oats)

1 cup oats

1/3 cup coconut sugar

2 + 1/4 tsp baking powder

1 tsp ground ginger

Generous pinch of sea salt

1/3 cup solid coconut oil or chilled grassfed butter

1 egg

2 tbsp almond milk

1 cup pitted sour cherries (read tips below)

1 tsp freshly grated ginger

1/4 cup almond flour or extra oat flour, for dusting

Tools: Baking sheet, parchment paper, large bowl, small bowl, pastry cutter or fork

Before you do anything, pit the cherries. You can use a cherry pitter, but I've found the fastest, least wasteful, and easiest way is to just squeeze out the pits over a bowl. Place the cherries in the bowl with any juice that may squeeze out and toss the pits in a cup before discarding.

Preheat your oven to 400 F and line the baking sheet with parchment paper.

Mix together the oat flour, oats, coconut sugar, baking powder, ginger, and salt in a large bowl until well combined. Use a fork to cut in the solid oil or cold butter until the mixture resembles cornmeal.

Whisk the egg and almond milk together in a small bowl. Add the egg mixture to the flour mixture and mix until just combined. Fold in the cherries and the grated ginger.

Dust a cutting board with some almond flour or extra oat flour and turn out the dough. Pat the dough into two large hockey pucks and place on the parchment-lined baking sheet.

Bake until golden, about 20-25 minutes, or until a toothpick inserted into the center comes out mostly clean.

Remove from the oven and, while still warm, carefully cut into sections with a sharp knife. Cool on a wire rack (or eat immediately, I won't blame you if you do). Enjoy!

But for now you can follow along on this unexpected adventure on my instagram, I took these a couple weeks back while in Maine for Independence Day, it was a solo trip, really just a chance to hang out with my mom and chill for a bit while also shooting for work. The city had been closing in, as it tends to do, and a long weekend presented the perfect opportunity to get the hell out of there. As I've grown older I've felt my patience for city life waning, funny, because as I kid I wanted nothing more than to escape the wilderness for bustling, brimming, frenetic NYC. HA! These days I'm perfectly content in my mother's garden, or sitting on the bench in the back yard. Give me some grass and a fire pit and I'm happy.

It has honestly been ages since I took my own photos, shameful, I know. Since we moved to more urban areas with people around, I've felt myself relying more and more on Chris to take quick photos while no one is coming. Convenient, yes. Creative? Not always. So it was nice to take a few minutes while picking snowpeas from my mom's garden to play around with the tripod again, experiment a little, and get back to shooting my own stuff. Even if it is relegated to my mom's backyard.

Let's not pretend this outfit hasn't been worn before, but a good thing is a good thing and in my weakened state (hello, annual summer cold) my mind turned to "hey, maybe getting dressed will make me feel better." It didn't, but I felt cute despite my severe congestion and general crappyness (that's a word, right? Please pretend it is). I love the pairing of this top and skirt, and the addition of black lace-up sandals makes the whole thing feel more complete than my old brown pair, summer perfection.

If there's one thing I'm terrible at (lies, I'm terrible at a lot of things) it's taking care of myself when I'm sick, especially in the summer. My mind is all "it's so nice out! Why do you feel so crappy, body? Let's do stuff!" and my body's all "I hate you." Despite Chris' pleas for me to take a nap, I force myself to stay awake, against better judgement. And yes, I'm that person. I'm that person who drags herself to work with a cold. I know. Not only setting an awful example but eventually having to admit defeat and drag myself back home (this has happened twice this week). So... I need to get better at this. Because it's no way to live. Any tips?

Here & There 7.12

Happy weekend! It was back to city life this week, a painful adjustment after five quiet, chilled out days up north. After a long morning run, Chris and I hung out around the city today, a much needed day date after several days apart. Tomorrow we're headed up to New Hope/Lambertville with some friends for the day and I'm looking forward to checking out some vintage shops. Have a great weekend!

In the Green

I'm surrounded by green this week. the smell, the sound, the sheer taste of it in the air brings back so many memories and invites relaxation. Sweet fern and alfalfa growing by the roadside. Pine trees spreading their limbs to canopy above. The cat slinking through tall grass. The stress leaving my body is a physical sensation, melting from the top of my head and out through my toes. In these moments the thought of living in the city feels absurd, an impossibility. An uncomfortable fact.

Here + There + Happy 4th of July!

Happy (almost) 4th of July, friends! I'm writing to you from beautiful Beverly, MA and I couldn't be happier to have 24 hours in our old stomping grounds. So much has changed, but it's all still the same. Different people, different businesses, same lovely little city. I think I'll always feel conflicted about our move away from here - it was something that had to happen, but our life here was pretty fantastic as well. And I guess that's all you can ask for - better to move while still enamored with the place you call home. My nostalgia is always kicked up a few notches in the summer, pining for long bike rides and skinny dips and blow out, bad-decision parties on our old roof. Ugh, summer.

I'm on a solo trip this week visiting family and friends, and checking a few things off my summer bucket list while I'm at it. Lunch at my favorite cafe, breakfast at my favorite diner, lots of beach time, and -- of course -- some fun work projects thrown in for good measure. I'm looking forward to spending the evening with two of my closest friends tonight and then heading further North tomorrow to see my family - it's been too long!

How are you celebrating the long weekend? Fireworks? Parties? I hope it's wonderful however you spend it.
